11 egg whites
6 egg yolks
1½ cups sugar
1 teaspoonful cream of tartar

Beat the egg whites in a mixing bowl until they turn stiff and flaky.
Add half the sugar. Beat the yolks in another bowl.
Add the remaining sugar and beat some more.
Combine the mixtures and then add the tartar, orange peel and flour.
Combine to make a smooth mixture.
Preheat the oven to 300°F.
Grease a cake pan with cooking spray or melted butter.
Add the mixture to the pan and bake for 50–60 minutes, until evenly brown.
