Enjoy the well-balanced flavors of vanilla and cream in these vintage State Fair Puffs. They have many vibrant flavors to please everyone in your family.
Serves 10 | Prep. time 25 minutes | Cooking time 35 minutes
¼ teaspoon salt
1 cup all-purpose flour
1 cup water
½ cup butter, melted
2 cups heavy whipping cream
2 tablespoons milk
1 egg yolk, lightly beaten
¼ cup confectioners’ sugar
½ teaspoon vanilla extract
Additional confectioners’ sugar for topping
Heat the butter and salt in a large saucepan or skillet over medium-high heat.
Add the water and stir gently.
Add the flour and stir until no lumps remain. Set aside to cool.
Add the eggs one at a time and beat until the mixture becomes smooth.
Preheat the oven to 400°F. Grease baking sheets with cooking spray or melted butter.
Place ¼-cup portions of the mixture on the sheets, keeping some space in between.
Combine the yolk and milk; brush over the puffs. Bake until golden brown, about 30–35 minutes.
Slit each puff to let the steam escape. Let cool.
Beat the cream in a medium-large bowl until it thickens.
Mix in the vanilla and sugar. Beat again until stiff.
Remove the soft inside dough from the puffs.
Fill them with the cream and sprinkle confectioners’ sugar on top.
Serve warm. Refrigerate any leftovers.
