BASIC GREEK VINAIGRETTE


When you want to keep your salad dressing light, dairy-free, and still packed with healthy fats for a keto lifestyle, a basic Greek vinaigrette is a perfect choice. It pairs perfectly with Greek salad, but is also versatile enough for many other types of salads, including Greek Horiatiki Zucchini Salad (this page). And you can usually store it for a couple of weeks!

MAKES ~½ CUP

⅓ cup olive oil

1 tablespoon red wine vinegar

1 tablespoon lemon juice

1 teaspoon Dijon mustard

½ teaspoon dried oregano

¼ teaspoon garlic powder

¼ teaspoon sea salt

⅛ teaspoon black pepper

In a small bowl, whisk together all the ingredients until smooth.

TIPS & VARIATIONS

• I recommend 1 tablespoon dressing to every 1 to 1½ cups salad. If your salad has greens, a serving of salad will be 2 to 3 cups, so about 2 tablespoons dressing will go with it. For a salad without greens, a serving will be smaller (typically about 1 cup), so 1 tablespoon dressing should be sufficient for a serving.

• Like any vinaigrette, this dressing may separate after storing in the fridge for a while. Simply shake it to re-emulsify.
